The 100% Müller-Thurgau grapes were fermented on skins for 11 days, then pressed into neutral French oak barrels. Aromatics of light florals of chamomile and white tea hit the nose, followed by green papaya and mango, light apricot and peach, and a hint of salinity on a light- to light-mid bodied wine. Try pairing this one with fried chicken or tofu katsu with a miso honey sauce, or a Thai papaya or mango salad, or a flaky white fish with a light cream sauce. But this one will sing all by itself too!
