We've waited a long 30 months to get to enjoy our '22 Cabernet Sauvignon and are excited to finally be able to share with our communities. Our certified sustainable grapes sourced from Angiolina Vineyard, Rattlesnake Hills AVA, provide an amazing framework for this wine. Utilizing our regular low intervention winemaking techniques with wild yeast fermentations, mostly neutral and judicious new oak aging, sur lie, unfined, unfiltered and minimal sulfite adds give us a fresh and bold take on Yakima Valley Cabs.

Ken Dillon, Owner & Winemaker of Footprint Wine Tap, is proud to introduce our limited production inaugural Cabernet Sauvignon that is perfect to enjoy as is, with family and friends, or pair with a range of foods, year round. The rolling hills of Angiolina Vineyard and surrounding Valley depict Ken’s mid-summer evening vineyard sampling and touring in a beautiful abstract landscape label design.

¨ Vineyard/AVA: Angiolina Vineyard/Rattlesnake Hills AVA — Yakima Valley (certified WA Sustainable, LODI, Salmon Safe)

¨ Vinification: ambient and wild yeasts fermentation, 15% new French oak for 19 months, 85% neutral French oak barrel aged sur lie for 23 months, no fining/filtration, and minimal sulfur addition

¨ pH: 3.87, TA 5.2 g/L

¨ Limited 32 cases + 7 kegs produced

¨ Sensory: Bold and nuanced, rich and refreshing aromatics and flavors of ripe red and black currants, plums, mocha, graphite, petrichor, coffee bean, vanilla, brioche, crushed gravel, laced natural acidity and baking spices. Our med-full bodied Cab Sauv is weighted, complex yet supple and round on the finish, inviting another sensory craving and satisfaction until the last drop. Will age well in your cellar for 5-15+ years if you can wait that long.
